KASHMIRI KAHWA

A traditional Kashmiri Kahwa Tea, consists of Saffron, Cardamom, Cloves and Cinnamon, Kashmir Rose; Creating an unforgettable fragrance as the tea brews.

IT IS SERVED WITH SUGAR OR HONEY AND CRUSHED NUTS, USUALLY ALMONDS OR WALNUTS.

Traditionally, Kahwa is prepared in a copper kettle known as a SAMOVAR. Kahwa is also made in normal pots and kettles. It is served in tiny, shallow cups. Kahwa in Kashmir is also commonly served after WAZWAN and elaborate family dinners.

SAFFRON MILK

PREPARATION TIME- 10 MINS | SERVES- 3 | CALORIES- 110 KCAL | 1 CUP = 250 ML

INGREDIENTS

Milk - 3 CUPS
Saffron Strands: 10-15
Jaggery Powder: 2 tbsp (optional)

PROCEDURE

Bring milk to a boil
Add saffron strands
Mix well
Simmer for 4-5 minutes
Serve Hot

TIPS

During Boiling ; Add 2 Tbsp (30 ml) sliced almonds, 1/4 tsp (1.25 ml) saffron threads, Ground cardamom, and 1 to 2 Tbsp (15 to 30 ml) of Honey.
Don’t use more than 20 strands of saffron in this recipe.

SAFFRON TEA

PREPARATION TIME- 10 MINS | SERVES- 3 | CALORIES- 29 KCAL | 1 CUP = 250 ML

INGREDIENTS

Water - 3 CUPS
Water: 3 cups
Mint Leaves: 10
Cardamom: 3 pods
Cloves: 3
Saffron Strands: 3-4
Ginger: 1/2 inch
Lime juice: 2 tsp
Honey: 2 tbsp (optional)

PROCEDURE

Boil water with cardamom, grated ginger, mint leaves, and saffron for 3-4 minutes.
Simmer for 2-3 minutes and take off the flame.
Stir in lemon juice, honey and serve hot.

TIPS

  • Store saffron in a dry, cool and dark place or in the freezer.
  • Do not steep saffron for long as the liquid will turn bitter.
  • For better Taste use white tea instead of green tea which is mild in flavor and will let the aroma and ingredients to boost flavors , while providing its revitalizing benefits.
  • Store the tea in the refrigerator for about a week.
  • Enjoy it cold or hot.
